'I had printed out this recipe a long time ago to try it out. I found it back in my recipes some days ago. Since I had lots of potatoes, I thought I would only substitute the sweet potatoes with the actual potatoes.
I made sure I patted dry them as they contain some liquid.
It turn out really nice, was a big hit for both kids and a great addition to my son's matpakke!' (Caroline - andelshaver)
Ingredients
- 2 cups sweet potato, grated - I changed to potatoes
- 2 cups zucchini, grated
- 2 cups carrot, grated
- 1 onion, chopped fine
- 1 cup flour ( I used gluten-free buckwheat, brown rice or chickpea would be great options)
- 2 eggs (or equivalent egg replacement)
- 2 tsp baking powder
- ½ tsp salt (or a little more to taste)
- ¼ olive or coconut oil
