I was quite curious to try to make pestos out of our carrot tops from the previous harvest.
Here are some exemples of recipes :
I tried the latest one but found it was a bit too strong for us (and esp for the little ones) so I added a little bit of mapple syrup to make it slightly sweeter.
We loved it on top of bread with a bit of cottage cheese.
We have tried it on pastas and it was really nice.
But we enjoyed it best over a pizza. Instead of classical tomato sauce.
